{"id":432,"date":"2012-10-10T19:10:52","date_gmt":"2012-10-11T00:10:52","guid":{"rendered":"http:\/\/blogs.universalem.org\/homo_aestheticus\/?p=432"},"modified":"2012-11-09T19:54:43","modified_gmt":"2012-11-10T01:54:43","slug":"10-10-more-pudding","status":"publish","type":"post","link":"https:\/\/blogs.universalem.org\/homo_aestheticus\/2012\/10\/10\/10-10-more-pudding\/","title":{"rendered":"10.10. &#8230; more pudding"},"content":{"rendered":"<p>When I made pumpkin pudding last week I <em>liked<\/em> but did not <em>love<\/em> it &#8230; it wasn&#8217;t quite sweet enough.<\/p>\n<p><!--more--><br \/>\nBut today I realized that I still had part of a can of pumpkin in the fridge (a few days ago I mixed some of it with oats for breakfast).<\/p>\n<ul>\n<li>180g pumpkin<\/li>\n<li>1 1\/2 cup soy milk<\/li>\n<li>2 Tbsp sugar<\/li>\n<li>1\/2 tsp maple syrup<\/li>\n<li>pinch of salt<\/li>\n<li>cinnamon, cloves, nutmeg to taste (~ 1\/4 tsp each, maybe 1\/2 on the cinnamon)<\/li>\n<li>1 tsp vanilla extract<\/li>\n<li>10g cornstarch<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ol>\n<li>Combine all ingredients except vanilla in a saucepan.<\/li>\n<li>Bring ingredients to a simmer while whisking.<\/li>\n<li>Cook until mixture can coat the back of a spoon, a few minutes.<\/li>\n<li>Remove from heat and stir in vanilla. This all takes less than 10 minutes.<\/li>\n<li>Portion into 4 custard cups, cover with plastic wrap or lids, and refrigerate 3-4 hours or until cool and set.<\/li>\n<\/ol>\n<p>Serving Size: makes 4 servings, each in a custard cup (about 3\/4 cup each). ~ 90 calories \/ serving.<\/p>\n<p><em>&#8230; and you get to lick the spatula when you&#8217;re done!<\/em><\/p>\n<p>It&#8217;s October and I&#8217;m just in a pudding mood. And a pumpkin mood. And the other October pumpkin &#8216;thing&#8217; is pumpkin beer, usually ales. It&#8217;s been ages &#8212; since last winter? &#8212; since I last watched Brewing TV ( brewingtv.com\/episode-in<br \/>\ndex\/ ).
